Method

  1. Make Garam Masala. Roast fennel, pepper, cloves, cardamom, star anise, and cinnamon. Cool and grind.
  2. Sauté Base. In coconut oil, sauté whole spices, onions, curry leaves, and ginger-garlic paste.
  3. Cook Chicken. Add spices, salt, tomatoes, green chilies, and chicken. Add water, cover, and cook 15 mins.
  4. Finish Curry. Add pepper, ground garam masala, coconut milk, and water. Simmer 5 mins.
  5. Tempering. Sauté mustard, shallots, coconut slices, and curry leaves in oil. Add to curry and serve with steamed rice or chapati.
